(Serves 4)

- 1 cup Roasted Corn
- 1 each Cucumber, diced
- 2 cups, Grape Tomatoes, halved
- 1/4 each Red Onion, small diced
- 1/2 cup Crumbled Feta Cheese
- 1/2 each Lemon 
- 1/2 each Lime
- 2 tbsp Olive Oil
- 1 tbsp Fresh Basil, chopped
- 2 tbsp Fresh Parsley, chopped


Place all Vegetables in a medium bowl.

Zest Lemon & Lime and add both Zest and Juice to bowl.

Add Olive Oil.

Mix together well.

Season with Salt and Pepper to taste.

Add Crumbled Feta and gently mix.

Enjoy immediately or refrigerate for up to 4 days.
